It's going to be very hard to tell from this post that I actually do not like Thanksgiving and even harder to believe that I don't like it because of the food.
When I was little my parents made the same thing every year.
Turkey
Sweet Potatoes
Asparagus Casserole
Dressing
Well, out of the things listed above, the only one I like is the Turkey.
Ever since I was born I disliked sweet potatoes, still kind of do. I've grown to love asparagus but I am still not a fan of dressing, its soggy bread.
This year we are celebrating Thanksgiving twice, once as a small intimate family and then again on Friday with everyone all together. Well what does that mean, a lot of cooking for me but I am looking forward to what I am making.

Butternut Squash Soup with Bacon and Apple
Smoked Turkey
Green Been Casserole
Onion Sour Cream Mashed Potatoes
Pumpkin Dinner Rolls
Caramel Cake
On Friday I am taking
Caramelized Carrots
Smors Cupcakes
So today I prepped and prepped and prepped.
Made homemade chicken broth for the soup, roasted the pumpkin for the pumpkin puree in the dinner rolls, made the cake and the cupcakes (but not the frosting or filling)
So I still have a lot to do tomorrow but I think I can see the light at the end of the tunnel and since I love cooking this has been an enjoyable day and I am looking forward to Thanksgiving for the first time in many years.
